Emeril Kicks It Up A Notch At Viking Classic

MADISON, Miss. -- Fans packed the Viking Culinary Tent on Thursday to watch Chef Emeril Lagasse kick it up a notch.

The famous TV chef from New Orleans presented two cooking demonstrations, where he prepared a chicken dish that he called economical and weather-friendly. He also made a watermelon margarita using locally grown fruit.

Lagasse said a lot of the produce and herbs he uses in his restaurants come from Mississippi farms, most of which are in Meridian.

"We've been doing this in Mississippi organically for 28 years, when people didn't even know what organic was," Lagasse said. "There are a lot of great things about Mississippi. Besides its people, one of the great things about it is its soil."

The net profits of Lagasse's two cooking demonstrations benefited Friends of Children's Hospital.

"One of the main reasons I'm here is that I have an incredible relationship with Viking. As a matter of fact, together we have just launched their very first ever chef-endorsed product, with my gas and charcoal grills," Lagasse said. "As you know, I'm also very involved with (Blair E. Batson Hospital for Children). I was asked by Viking many years ago not only to help support the Children's Hospital in their efforts in what I can do, but I was also asked by my good friend Eli Manning to help him in his efforts in supporting it. So, as you know, Eli has a part of the hospital now, which I'm pleased to say I helped him raise money for that."

The state-of-the-art, 15,600 square-foot Eli Manning Children's Clinics offers a range of services, including well-child visits, vaccinations and acute care, according to the University of Mississippi Medical Center's website .

"It's amazing that God has allowed me to have a talent above cooking and how my career has evolved," Lagasse said. "A lot of people that look up to me are children, and so my efforts about whether it's my foundation or the Children's Hospital, are important to me to give kids a chance. You know, they're the future."

The Viking Classic PGA tournament and cooking demonstrations continue at Annadale Golf Club in Madison through Sunday.
